BARBECUE IS NOT THE FIRST THING we
think of when it comes to Jersey dining.
But this quintessentially American style
of eating has made significant inroads in
the Garden State, where chefs are winning fans by honoring the “
low-and-slow” tradition—low temperatures and
long cooking times—of barbecue hotbeds such as Texas and the Carolinas.
One could argue that smoked meats
and pulled pork fit comfortably with
Garden State pizza, hot dogs and Taylor
ham/pork roll. Certainly, barbecue can
be made to feel at home here. Consider Finks BBQ Smokehouse in Dumont,
where owner/pitmaster Dave Finkelstein smothers fries with pulled pork,
melted cheeses, sour cream and scallions. “I make the kind of food people in
New Jersey like to eat,” he declares.
Then there’s Cubby’s in Hackensack,
where owner Bobby Egan reminds us
that in New Jersey, barbecue usually
means backyard grilling. So while ba-
by-back ribs and pulled pork are slow-
smoked, the rest of Cubby’s meat offer-
ings are grilled, “Jersey cookout style.”
