JERSEY LIKE PIZZA
my, how things have changed for
lovers of pizza. Eight years ago, in February 2010, when New Jersey Monthly
last did a deep dive into the subject,
pizza-making was more workmanlike
craft than art. Today’s pizzerias have
caught up with the broader trend of artisanal cuisine, with greater attention
to the quality of ingredients, more nuanced flavors and improved equipment.

a carefully composed brunch pie from
Talula’s in Asbury Park, one of the relative newcomers picked by our panel
of eaters for this month’s cover story,
“ 36 Palaces of Pizza.” The Dolorian
is topped with smoked salmon, hash
browns, crema, capers, scallions and
dill. It’s hardly your grandfather’s pizza.

creations, today’s Garden State pizza
lovers are more likely to encounter classic Neapolitan pies. Made
