DIVING INTO DINERS & DIVES
nothing says “New Jersey” like a
meal in a diner, preferably a retro diner, with plenty of neon and glimmering
chrome. Who doesn’t love those piled-high pancakes, endless menus and bottomless cups of coffee? In some ways,
a diner is like an old friend, comforting, familiar and always welcoming.
Diners have been a fixture on the
Jersey landscape for more than a century. And for much of that time, the
Garden State could claim to be the
epicenter of diner manufacturing. For
decades, factory-built diners were
churned out by plants in cities like Paterson, Newark and Elizabeth.
The colorful and somewhat-for-gotten history of Jersey diner manufacturing is but one of the fascinating stories in this month’s “Diners &
Dives” issue. We also spend a morning shift with a hard-working diner
waitress, and look at some of the ways
diners have changed in recent years.
